Cinnamon pancakes with figs and baked apple | what are we eating today?

You need:

For 2 people

150 g whole wheat flour

200 ml (vegetable or semi-skimmed) milk

1 egg

2.5 tsp baking powder

1.5 tsp cinnamon

0.5 tsp baking spices (optional)

Possibly 0.5 tbsp honey

Pinch of salt

Oil for frying

Caramelized apple

1 apple

1 tsp honey

3 figs

This is how you make it:

Mix the whole wheat flour with cinnamon, cookie spices, baking powder and a pinch of salt. Then add the egg and mix briefly. Then add the milk while stirring. Mix it into a smooth batter. Then cut the apple into cubes and the figs into quarters.

Put a little oil in a frying pan. When the pan is hot enough, scoop a few heaps of batter into the pan with a spoon. As soon as bubbles appear in the batter, you can turn the pancakes. Fry them until golden brown on both sides. Repeat this process until the batter is used up.

While you bake the pancakes, make the caramelized apples. Place the apple cubes and honey in a pan and heat it. Fry it until soft, about 5 minutes. Serve the pancakes with the warm apples and figs. Enjoy your meal!
