Cheesecake in 30 minutes

Cream-mascarpone mousse is flavored with vanilla and biscuit crumbs. The taste of the cake is a bit like Oreo ice cream.

By using your favorite cookies, the cake is guaranteed to be pleasant and you can easily add additional nuances to the taste. For example, mint-filled cookies give you a nice freshness.

Cookies ‘n cream cheesecake

Base:

150 g of chocolate-filled cookies (e.g. Oreo or Domino)

40 g of butter

1. Crush the biscuits and mix in the melted butter. Place the rim of the springform pan (diameter 15 cm) on a serving plate. Firmly press the cookie crumb-butter mixture into the base.

Filling:

150 g of chocolate-filled cookies

350 g of mascarpone cheese

4 dl whipped cream

3/4 dl powdered sugar

1 tablespoon of natural vanilla sugar

1. Crush the cookies with a knife into pieces. Measure mascarpone and cream into a bowl. Sieve in the sugars and beat until smooth.

2. Add the cookie crumbs and beat until the mixture is thick enough to press. However, do not beat too much so that the mixture does not run.

3. Spoon the mixture over the base as tightly as possible. Level the surface with a palette knife, for example. If you are not serving the cake immediately, you can let it rest in its pan.

4. Remove the border by first heating it from the outside, e.g. with a gas fan or a towel dipped in hot water. Unroll the border and lift it away from around the cake. Decorate the cake with, for example, whipped cream and cookies.

Ornamentation:

1 dl whipped cream

1 tablespoon powdered sugar

6 chocolate filled cookies

1. Whip the cream and icing sugar. Put the foam in a piping bag with a star tip.

2. Extrude rosettes on the cake and place a cookie in each rosette.
