Broccoli is a meaty, delicious vegetable that also lends itself to steaks.

When you cut the broccoli vertically into slices, you can make nice-looking broccoli steaks. The best-tasting of these steaks can be obtained when you fry them with crispy surfaces in a pan and cook the steaks in the oven for a while longer.
The key to everything is that the broccoli is not overcooked. Broccoli steaks are at their best when the inside still has a chewy feel.
Fried broccoli and tahini sauce
(for 4 people)
2 broccoli
2 tablespoons of olive oil
1 teaspoon of finger salt
a few grinds of black pepper from the grinder
Pangrattato, or spicy breadcrumbs
100 g dried bread or 1 dl panko flour
2 tablespoons of olive oil
1 teaspoon chili flakes
Zest of 1 lemon
1/2 teaspoon salt
a few grinds of black pepper from the grinder
Tahini sauce
1 1/4 dl tahini
3/4 dl lemon juice
6 tablespoons of ice cold water
1/2 tsp finger salt
a pinch of cheese cumin
1. Prepare the tahini sauce. Whisk the Tahini until smooth. Add lemon juice and water. Mix until smooth and season with finger salt and cheese cumin.
2. Prepare the breadcrumbs. Grind the dried bread in a blender to a coarse crumb. Fry breadcrumbs in olive oil until golden brown and crispy. Season with chili flakes, lemon peel, salt and black pepper.
3. Cut the broccoli lengthwise into three parts into ‘steaks’. Fry the broccoli until golden brown in a frying pan. Transfer the broccoli to a baking tray and cook for 5-10 minutes at 200 degrees. Do not overcook the broccoli, the broccoli should remain crispy. Serve the broccoli with tahini sauce and breadcrumbs.
