Best Savory Pancake – Smoked salmon and potato spice it up

This recipe combines three favorites: pancake, smoked salmon and potato.

When you combine smoked salmon with two other favorite dishes of Finns, you can only get a treat. A pancake and a potato guarantees that.

We usually eat the pancake sweet with strawberry jam and whipped cream or ice cream, but you shouldn’t forget the salty pancake. It is quick help when you need good food easily and quickly.

– When we want an easy treat, we often make a pancake. It doesn’t take much cooking skills, chef Risto Mikkola laugh.

That doesn’t mean that a pancake is any less of a treat. In fact, Mikkola admits to being a pancake person, like many other Finns.

This time, Mikkola poured the pancake batter into small serving dishes, but a good result will also come if the pan is baked on a baking sheet.

It is recommended to grease the serving pans well before pouring the dough into them.

However, a pancake baked in a serving dish is a little luxury when you combine it with pickled red onion and dill methane.

– Smoked salmon potato pancake is suitable for both brunch and dinner parties. The dose will be downright salon-worthy, Mikkola advises.

If you don’t have muffin tins or trays in your cupboard, don’t worry. Small oven-proof cups or coffee cups also work as serving dishes, as long as you grease them first.

Pancake batter gets its juiciness from boiled potatoes, which are mashed, i.e. mashed through a strainer, pressing into the batter.

The best end result comes from floury potatoes, but if you don’t happen to have them in the cupboard, a firm potato will work too.

Mikkola’s favorite potatoes are the floury Lapland Puikula and firm Siikli.

You should make a bigger batch of red onion pickle at once, because it gives a good taste to many other dishes.

Smoked salmon potato pancake

0.5 dl olive oil

4 eggs

2 dl of milk

2 dl wheat flour

150 g of ripe potato mashed

1 dl chopped parsley

1 teaspoon of salt

400 g warm smoked salmon

1. Mix all the ingredients together, finally add the smoked salmon and mix carefully.

2. Divide the dough into well-greased serving dishes. Bake portion pancakes at 220 degrees for 15 minutes.

Dill tomato

2 cups sour cream

0.5 dl dill chips

salt

1. Whip the sour cream until light foam and add the rest of the ingredients.

Pickled red onion

1 red onion, chopped

½ dl brandy vinegar

1 dl sugar

1 dl of water

1. Boil water, sugar and vinegar in a pot.

2. Put the chopped onion in a container and pour the cooled broth over it. Let marinate for a few hours.
