The barbecue trends of 2022

Julius sees a clear trend in barbecue land: “Vegetables on the barbecue, that’s really trendy right now. And due to the drastic price increase of meat, you also see that people are going for cheaper cuts of meat, such as flat iron beef and pork shoulder.”

And what are chef Julius’s favorite dishes at the moment? Celeriac in a salt crust, slowly cooked on the barbecue. I then scoop out the puree and combine with beurre noisette and toasted hazelnuts. This gives a nutty allure. What is also very tasty is fennel from the barbecue, carrots with orange zest and slowly cooked pumpkin with dates and pecan nuts.”

Golden tip for the ultimate taste sensation

Did you know that the way you prepare the barbecue affects the taste of the dishes? Firelighters leave a chemical smell and taste in your food and spirits are dangerous to start the fire with. Julius says: “Certainly with the current trend of kamado barbecues, this is really a no go, because the aromas of the firelighters penetrate the ceramic of the barbecue. I recommend lighting it with a few pieces of wood. Another good option are stir fryers. This is wax with wood wool around it.”
