Käärijä, seen in the Eurovision finals, has inspired Finns to develop various contest delicacies suitable for the theme. This was also done by a custom bakery entrepreneur and a contestant on the Mestarileipurit television show Anna Jaatinenwhose development Käärijäkakku has garnered praise on social media.
Jaatinen calls the cake Jokamaunkaku, which, in the spirit of the Cha Cha Cha song, gets its flavor from the pineapple and coconut from the Piña colada cocktail.
– Last year I missed an easy and good banana cake recipe and ended up using my own muffin recipe. The banana cake turned out really well and within a week I had also tested the recipe in the blueberry-lemon and Da Capo bar flavors. Cakes sprung up like mushrooms in the rain, always with different flavors and at some point I ended up naming the cake Jokamaunkakku. You can modify the recipe in many different ways.
The secret of the cake is its simplicity, all the ingredients are just mixed and the cake is put in the oven.
– The cake itself is wonderfully succulent, and the frosting, which tastes gently like coconut, crowns the whole thing. The cake will keep in the fridge for a few days, so it can be prepared well in advance. Instead of a cake, you can also make muffins with the recipe, so it’s also very versatile, advises Jaatinen.
The bakery entrepreneur says that this year’s madness took him in a completely different way than in previous years.

Piña Colada cake
2 dl sugar
2 eggs (M size)
1.5 dl liquid rapeseed oil preparation
1 dl coconut milk
1–2 tablespoons of rum
3 dl special wheat flour
0.5 dl coconut flakes
2 teaspoons of baking powder
1 teaspoon of vanilla sugar
1 pc crushed pineapple
Icing:
40 g of butter
2 tablespoons of coconut milk
3 dl powdered sugar

1. Heat the oven to 175 degrees.
2. Mix the sugar, eggs, fat and liquids in a bowl.
3. Add the dry ingredients and mix.
4. Drain the crushed pineapple and add to the dough.
5. Pour the dough into the bread pan and bake on the lower level of the oven for about 60 minutes.
6. Allow to cool. Note that the baking time varies if you use, for example, a round pan. Baking time for the muffins is about 20 minutes on the middle level of the oven.
7. For the frosting, put all the ingredients except the color in a saucepan and heat on the stove until the butter has melted and the ingredients are mixed evenly. Take the pot off the stove, add the color and let it cool for a while. After that, pour the frosting over the cake.
