THEThe pistachio is the seed of the Pistacia vera plant, belonging to the Anacardiaceae family.
In Italy we are now used to enjoying pistachio in many preparations. Many, perhaps, know that pistachio has Middle Eastern originsbut few are aware of the fact that between the first places in the world production of this fruit there is America and that it even exists an association which brings together farmers and all those who work in this industry: American Pistachio Growers.
What is American Pistachio Growers?
American Pistachio Growers is a non-profit of the agricultural sector and represents more than 865 farmer members in California, Arizona and New Mexico. In fact, these states represent 100% of American pistachio production, with California in first place with 99% of crops. We are talking about an annual production of 2.6 billion dollars.
The association has been active in supporting this green industry for 30 years. Initially the goal was to promote the market launch of this product, also encouraging discussion around it and educating and training its growers.
Today American Pistachio Growers is led by a Board of Directors of 18 people and has the goal of ensuring fair competition among producers, not only in the United States but also in international markets.
The mission of this association is obviously to protect the interests of growers and to promote not only the fruit but also research, for the development of new products also in the nutritional field.
Furthermore, the association is committed to a correct regulation of use and for food safety, the indication on the label of the origin of the products, and to counter the problem of aflatoxins (toxins produced by mushrooms).
The benefits of American pistachio
Pistachio, in addition to being a highly energetic food, has important antioxidant functions enough to compete with the most popular foods with the same properties. It is also a complete protein of plant origin. It has all 9 essential amino acids and is perfect for those who prefer a diet plant based.
Pistachio is also a source of fatty acids and mineral salts such as magnesium, calcium and iron. Furthermore, it is rich in Vitamins B1, B6, PP, C and Vitamin E and carotenoids which greatly help the skin, protecting it from UV rays of the Sun. It also seems to be very useful against hypercholesterolemia.
For all these reasons, pistachio is really an excellent food to consume after physical exercise, because it provides the body with essential amino acids useful for muscle recovery. Obviously it is always good to associate this fruit with the right amount of carbohydrates.
Some complete snacks could be low-fat yogurt with cereals and pistachio or a fruit salad or pancakes with the addition of pistachio.
