When you have to get the food to the table quickly, you are allowed to correct it.

Cooking on weeknights is sometimes a busy job.
Chef Ilkka Lääveri know it firsthand. At best, he can finish the food even in an hour. But of course Lääveri admits that he is a professional, so chopping vegetables is easier for him than for a basic cook.
Even for us amateurs, Lääveri promises quick solutions. One such is a macaroni box without an oven.
– It’s an everyday reality that a box of macaroni doesn’t always make it to the oven before it’s eaten. This recipe has a mac and cheese spirit, Lääveri laughs.
Meat macaroni box without oven
400 g macaroni
700 g minced pork and beef
1 leek
1 pot of parsley leaves
150 g of grated cheese
50 g of butter
salt
black pepper
1. Cook the macaroni according to the instructions on the package in salted water.
2. Heat the frying pan until smoking and add the minced meat to the pan. If you have a good pan, there is no need to add oil.
3. Halve the leek and rinse it well. Cut the whole leek, including the green part, into thin slices. Add the leek to the browned minced meat, season with salt and pepper. Chop the parsley.
4. Drain the pasta in a colander and put it back in the pot. A little cooking water may remain in the pasta and the pasta may remain a little firm. Mix in the minced meat, parsley and half of the cheese and butter.
5. Season to taste with pepper and salt. Put the rest of the grated cheese on top of the mixture and serve.
Tip!
If you wish, you can also use other ground meats or soy groats, etc.
Seasoning is only limited by your imagination.
The recipe for the macaroni box can be found in the Huono mäiti community cookbook Cookbooks (Readme, 2022) published last year.
Kirja is the editor and founder of Huono aiti Sari Helinin and Lääver’s joint tribute to domestic food and raw materials.
