A new Detroit-style pizza chain opens in a cloud restaurant.
Detroit-style pan pizza is spreading to Finland.
Artist Mikael Gabriel opens a new pizza chain together with Munchfam and Wolt, which produces cloud restaurants, the company’s press release says.
The restaurant sells Detroit-inspired pan pizza, which is still rare in Finland. Similar pizza is available at least at the MoTown Square restaurant chain.
Traditionally, Detroit-style pizza is a rectangular pan pizza about three centimeters thick. The style was originally developed in 1964 by the owner of a bar called Buddy’s Rendezvous Gus Guerra.
He combined his Sicilian mother-in-law’s pizza dough recipe, American cheese and spicy tomato sauce in a deep rectangular dish. Since suitable pans were not yet available, the restaurant used spare pans used by the Detroit auto industry, which were made of blue steel.

Gabriel’s Pizza’s thick-bottomed pizza is inspired by the pan pizza that became famous in Detroit and, according to the release, it is a pizza intended for sharing.
The pizza has been developed together by Munchfam and a Michelin chef Pertti Kallioinen with.
The launch will first take place in the capital region and the availability of pizza will gradually expand during the autumn to more than 30 locations around Finland.
– I myself have always been a big fan of pizza, especially Yankee pizza. I have also been interested in the restaurant industry for a long time and I have dreamed that I could do something related to this during my career. I immediately started thinking about the bigger picture, from the visual appearance to the taste and appearance of the pizzas, says Mikael Gabriel in the press release.
The novelty product is only available by ordering from Wolt.
