Prosper Montagné: West Flemish people miss the title of ‘First chef of Belgium’
Among them also two West Flemish people. Kim De Vos, the sous chef of restaurant Zuid 55 in Sint-Pieters Brugge. He eventually finished fourth. Nicolas Mylle from Kortrijk, sous chef at Eykerhof restaurant in Bornem, came second. They had to make a starter, main course and dessert. Kim De Vos, sous chef at restaurant Zuid 55 Brugge: “We trained all summer, all September. When we knew we had been selected, I was on holiday, but when we got back, we flew in. Weighed on Saturday, cooked on Sunday, week in, week out.”

The jury included three-star chef Peter Goossens: “I pay attention to the right flavors, right cuissons, presentation, creation of the dish. It is with imposed tests. You have to see whether they are all perfect. Ultimately, it is about the taste . Can I still learn? Everyone can always learn. New techniques are always emerging, new ideas. The kitchen never stands still and will never stand still.”
The Prosper Montagné cooking competition has been around since 1952 and is highly respected. Eddie Van Maele, Provost General Prosper Montagné: “I think that competition is very important. I won it 50 years ago and it opened many doors for me that would otherwise be closed. And that is what Prosper Montagné is , to be at the service of young chefs to give them a springboard in their own career.”
