THENGREDIENTS X 4/6 popsicles (for three)
Avocado flavour: 2 ripe avocados, 300 ml coconut water, the juice of 1 lemon, the seeds of a vanilla pod or 1 teaspoon of vanilla paste, 1 teaspoon of liquid honey.
Elderberry flavour: 300 g cucumber, a bunch of fresh mint, 100 ml of elderberry syrup, the juice and zest of 1-2 untreated limes, a good dash of gin (optional).
Strawberry flavour: 50 ml agave syrup, 100 ml coconut water, 1 untreated lemon (juice and zest), 1/2 teaspoon crushed fennel seeds.
Method
Avocado, honey, vanilla. Pit the avocados and put the pulp in the blender. Add the other ingredients and blend until you get a smooth mixture. Taste to verify the sweetness and if necessary add more honey; pour into molds and freeze for at least 4 hours.
Elderberry, cucumber, lime. Blend the peeled and chopped cucumbers for a few seconds together with the mint, leaving the mixture however to remain a little thick. Pour into a bowl and add the elderberry syrupthe zest and juice of the lime and, if you like, a dash of gin. Taste for sweetness or add the other lime. Pour into molds and freeze for at least 4 hours.
Strawberries, fennel seeds, lemon. Blend the strawberries until you get a coarse puree, then transfer them to a bowl with the agave syrup, coconut water, lemon zest and juice, and crushed fennel seeds. Pour into molds and freeze for at least 4 hours.
