Early summer is the season for rhubarb.
The appearance of rhubarb in shops and markets is a sure sign of the beginning of summer, and you should make the most of this seasonal delicacy now. Rhubarb, which is known to have a rather sour taste, is as if it was made to be combined with sweet oatmeal.
Those who long for an easy dessert will forget about the more laborious pies and cakes this time, because rhubarb makes a wonderful treat even without actual baking. A simple rhubarb roast is easy, and it is made using the same technique as the familiar apple and oat roast.
Mixing this delicacy for the oven takes no time, after which you still have to wait half an hour for the rhubarb to ripen and soften in the oven. The secret of the fry is perfectly soft rhubarb combined with crunchy oats.
Rhubarb Roast
500 g of rhubarb
0.5 dl of sugar
Oatmeal
75 g of butter or liquid vegetable fat
3 dl of oatmeal
0.5 dl of sugar
1 teaspoon of vanilla sugar
1. Rinse the rhubarb and cut them into pieces about 1 cm thick.
2. Pour the rhubarb pieces into the baking dish. Sprinkle the sugar over the rhubarb pieces and mix.
3. Prepare oatmeal by melting the fat and mixing it with oatmeal, sugar and vanilla sugar.
4. Pour the oatmeal mixture over the rhubarb pieces.
5. Bake at 200 degrees for about 30 minutes, until the roast is crispy and the oatmeal has a beautiful color.
6. Serve warm with vanilla foam or vanilla ice cream.
