Here’s the reason why you should cook a big batch of potatoes – Addictively crispy and tasty

Patatas bravas are a popular Spanish tapas. You can make it from leftover potatoes, so you should cook a big pot of potatoes at once.

Fried and spicy potatoes are served with tomato sauce and garlic mayonnaise.

Patatas bravas

1 kg of potatoes

4 tablespoons of oil

1 tsp paprika powder

1/2 teaspoon salt

make aioli or garlic mayonnaise

Tomato sauce

1 onion

2 cloves of garlic

1 tsp (400 g) peeled tomatoes in tomato juice

1 tablespoon of apple or white vinegar

2 tablespoons of tomato puree

approx. 5 drops of tabasco

1 teaspoon of salt

a pinch of sugar

1. Boil the potatoes until almost cooked in salted water. Cut the potatoes into a suitable size.

2. Brown the potatoes in a hot pan in plenty of oil. Lower the heat and continue frying, turning occasionally, for about 5 minutes or until the potatoes are fully cooked. Season the potatoes with paprika and salt.

Make the tomato sauce:

1. Peel and chop the onion and garlic cloves. Saute onions and garlic in oil.

2. Add the tomatoes and break the structure of the tomatoes with a spatula. Add the rest of the sauce ingredients and simmer for 10–15 minutes or until the tomato sauce is suitably thick.

3. Serve the fried potatoes with tomato sauce and garlic mayonnaise.
