Which student chef can cook the best with fish from the North Sea?
In hotel school Ter Groene Poorte in Bruges, the final years of the specialization year CHEF! put on their chef’s jacket to work with unknown North Sea fish, such as the pout or the red mullet. Star chef Filip Claeys watched along.

The jury pays attention to creativity, taste and the use of all ingredients. The duo that started working with the red mullet wins. They may call themselves junior ambassador North Sea Chefs for one year.
“It was surprising and a pleasant experience. We learned a lot of new things. That it is not just a fish that you just get into the kitchen. That there is really much more to it,” say Thu Thuy and Zeb, winners of this first edition.
