Egg consumption has increased in Finland. And no wonder, because many people consider eggs healthy, easy and affordable. Egg is therefore a good raw material in many ways.

We often talk about where eggs should be stored, but there are other instructions for handling it. Few seem to follow these instructions.

The Food Agency says on its website that you should wash your hands after touching an egg shell: “Whenever you have handled egg shells, it is good to wash your hands, because eggs are never perfectly clean”.

In Finland, eggs are not washed, so their surface is in the same state as when the hen laid the egg. In Finland, it is forbidden to wash eggs, although in many other countries eggs are washed by machine.

On top of the egg shell is a thin waxy layer called the cuticle. Washing the egg removes the cuticle, so the egg is no longer as well protected from impurities and its shelf life is shortened. For this reason, in Finland, eggs are not washed before packaging.

If you want a slightly different flavor to your boiled eggs, you should make this chef Risto Mikkolan gimmick. Mikkola advises to dip boiled eggs in soy broth.

Eggs marinated in soy are most often combined with ramen soup, with which Tokyo– book (Readme.fi 2025), the whole of Japan was fed in the years after the war. It was cheap and fast basic food. There are many styles of soup these days, but ramen eggs remain.

In addition to soup, soy eggs are delicious both in a salad and on their own.

Marinated eggs can be kept in the fridge for a few days, but it’s good to remember that their flavor will intensify all the time.

Soy eggs

4 eggs

1.5 dl of soy

2 tablespoons of white vinegar

2 tablespoons of sugar

1. Add the eggs to the boiling water and boil for exactly 7 minutes.

2. Cool the eggs in ice-cold water. Boil soy, sugar and vinegar. Cool down.

3. Combine the peeled eggs and soy broth in the right size jar or Minigrip bag. Leave to marinate for 6 hours or overnight.
