Beetroot collects nitrates from the soil, so it is not recommended for children under one year of age. Nitrate can turn into nitrite in the body, and this reduces the ability of hemoglobin to transport oxygen to the cells. Nitrate concentrations are reduced when the beets are cooked and peeled.

Rye beetroot pie
Base:
1 pkt frozen dough
Filling:
5 (300 g) vinegar beetroot
1 dl fresh basil in strips
150 g Aura cheese crumb
2 dl whipped cream
2 eggs
1. Grate the beets and stir in chopped basil, crumbled blue cheese, cream and eggs.
2. Roll the melted dough into a round plate. Lift the dough into the pie pan so that it covers the bottom and edges of the pan. Pre -bake the dough for 10 min.
3. Pour the filling over the bottom into the pan. Cook the pie at 175 degrees for about 40 minutes or until the filling is coagulated even in the middle.

Beetroot contains a variety of minerals such as calcium, potassium, magnesium, zinc and iron.
Vitamins in beetroot are comfortable: beta-carotene, vitamin C and E, and B vitamins, especially folate.
Folate intake is easily low in Finns’ diets. The strong color of beetroot, in turn, is about bioactive substances.
