Vitamin C makes us feel fit and energetic. The advice is therefore to get at least 75 mg per day. Did you know that 100 g of kiwi contains more vitamin C than other fruits, such as strawberries or oranges? A green kiwi contains 88 mg of vitamin C per 100 g and a yellow one no less than 152 mg. Start your day right with one of these surprising breakfasts with kiwi.

1. Smoothie bowl with kiwi, pineapple and coconut

Smoothie bowls come in all shapes and sizes. This one smoothie bowl with yellow kiwi, pineapple and coconut chips has a surprising taste and is easy to make. Recommended for the coconut lovers among us: replace the normal yogurt with coconut yogurt.

Good to know: the banana pieces need to be frozen for 4 to 6 hours. Handy to do this the night before.

Ingredients (4 servings)

• 6 yellow kiwis

• 2 bananas

• 250 g frozen pineapple

• 40 g coconut grater

• 300 g (coconut) yogurt

• 1 tsp cinnamon

• 2 tbsp chia seeds

Preparation method

  1. Cut the banana into pieces and freeze it for at least 4 to 6 hours.
  2. Peel the kiwis and cut them into slices.
  3. Blend 2 kiwis, the frozen banana, pineapple, cinnamon and half of the (coconut) yogurt in a blender or food processor until a thick texture is formed.
  4. Divide the smoothie bowl among 4 bowls. Garnish with the rest of the (coconut) yogurt, grated coconut, chia seeds and kiwi slices.

2. Almond Pancakes with Kiwi

This one almond pancakes are perfect for a relaxed Sunday morning. The addition of kiwi gives the sweet breakfast a fresh taste and is still full of vitamins.

Ingredients (4 servings)

• 270 g flour

• 3 tsp baking powder

• 50 g sugar

• 1 egg

• 310 ml milk

• 125 g yogurt

• 75 g butter + 1 tsp

Serve with:

• 4 tbsp maple syrup or honey

• 4 cubes of butter (15 g)

• 4 green kiwis (in pieces or slices)

• 2 tbsp toasted almond flakes

Preparation method

  1. Mix the flour and baking powder in a bowl. In another bowl, beat the egg with the milk, sugar, yogurt and melted butter (75 g). Add the flour and baking powder and stir with a whisk.
  2. Grease a large non-stick pan and make 2 or 3 pancakes from the mixture in the pan. Let them cook for a minute, turn them over and cook for another minute.
  3. Remove from the pan and divide among plates. Repeat for the rest of the mixture.
  4. Serve warm with a little butter and syrup, the kiwifruit cut into pieces or slices and the almond flakes.

3. Panini with chicken, kiwi and mozzarella

Do you like a hearty breakfast and do you have the time to prepare something delicious? Then you want this panini sandwiches with chicken, kiwi and mozzarella definitely give it a try. This breakfast is a delicious start to the day and contains a lot of vitamin C. You can complete it with the homemade kiwi pesto.

Ingredients (4 servings)

4 green kiwis

4 panini sandwiches

2 tomatoes

150 g smoked chicken breast (sliced)

• 200 g mozzarella

• 40 g arugula

For the kiwi pesto:

• 2 green kiwis (peeled and diced)

• 30 g basil

• 40 g pine nuts

• 2 tbsp extra virgin olive oil

• 1 garlic clove (pressed)

Preparation method

  1. Heat a frying pan over medium heat, add the pine nuts and toast them for 4-5 minutes until golden brown.
  2. Blend all of the kiwi pesto ingredients, except the olive oil, in a food processor or blender until you have a smooth paste. Slowly add the extra virgin olive oil. Taste and season with salt and pepper.
  3. Peel the kiwis and cut the kiwis, mozzarella and tomatoes into slices.
  4. Top the paninis with the kiwi pesto, arugula, mozzarella, kiwi slices, chicken, tomato and another thin layer of kiwi pesto.
  5. Place the buns in a panini iron for 4 minutes, or grill them in a griddle pan for 4 minutes on each side until the cheese has melted.

4. Scones with yogurt and kiwi jam

You don’t have to be an experienced baker to make this breakfast. With the easy recipe, these homemade scones with yogurt drizzle and kiwi jam in a jiffy on the table. Also fun to make with the (grand) children!
