This June 15, World Tapas Day is celebrated, one of the maxims of identity of Iberian gastronomy, which has been reversed throughout the world. Here is a tour of restaurants and tapas, from the most traditional to the most risky when it comes to introducing new ingredients in the preparation.

A place that captivates with an intimate and elegant aesthetic and invites you to share tapas and signature cocktails. With a visible Spanish imprint and flavors from other world cuisines, the menu offers smoked prawns with strawberries and a special marinade; a potato waffle with sweet-spicy tomato sauce (in homage to the classic papas bravas); a loin tataki with vermouth; and a house-cured salmon with cucumber relish and wasabi mayonnaise; among other tempting options.

On the gastronomic walk there is a wide variety of proposals for lovers of gastronomy. Among the different places is Pampanada, specialized in skewers and tapas made with carefully selected local ingredients. This June 15, for Tapas Day, they will have special options that will be offered in combo with artisan country bread and two glasses of La Fuerza vermouth, for $7,840. You can choose between garlic prawns with candied tomatoes and pesto; potato omelette with candied tomatoes and aioli; bocconccinos with candied tomatoes and pesto; grilled vegetables with pesto (zucchini, eggplant, tomatoes and mushrooms) or olive gremolata, tomato confit, basil and garlic with tapenade.

To enjoy tapas in a modern design environment, surrounded by greenery and with good music, you can visit this specialty cafeteria and listening bar, which adds an interesting offer of “little dishes” and cocktails that stand out for their freshness and originality. Some favorites are the mushroom croquettes with romesco sauce; organic aubergine baked in a clay oven with beetroot cream, goat ricotta, toasted hazelnuts and herbs; and hummus with roasted broccoli, fried almonds, tahini, pickles and egg in 5′.

Walking through San Telmo, the outing can be complemented with a natural and healthy tapas in Hierbabuena. This June 15, they will serve a vegan picada to share, which will tempt everyone equally. It includes seasonal vegetable cheese, vegan sausage, mushroom marinade, green hummus, kale chips and marinated olives, for 3,500 for two people. All products are handcrafted in-house, with seasonal organic ingredients. It can be complemented with a variety of home-made breads, based on sourdough and organic flours.

Those who like Latin cuisine have an appointment at Ronconcón (which has another location at Armenia 1744, Mercado Soho), a restaurant that fuses flavors from Venezuela, Colombia, Peru, Mexico and more sister countries, in small dishes designed to take to the center of the table and share. The cheese fritters with papelón sauce stand out; the tequeños with llanero cheese, ripe banana and orange compote; manioc rösti with prawns, avocado, bell pepper sauce and pickles; and the cornbread with fried chicken, mashed avocado, manjar negro and pickled chiles. Everything can be accompanied with aguapanela, coconut lemonade, Jamaica water, beers, boutique wines and interesting signature cocktails.
