4-ingredient veggie steaks: “I could eat straight from the pan”

Zucchini steaks are super good.

Zucchini and halloumi go well together. Eeva Paljakka

– I could eat them straight from the pan, they are so addictive, confesses the food influencer and author Fairy tale Koivisto name bearer on his blog.

Steaks are simple to make. All you need is a grater and a frying pan. Zucchini and halloumi cheese are grated, and then the grated is mixed with egg and breadcrumbs to make a dough.

You don’t need salt, there’s enough of it in the halloumi.

Drain the grated pumpkin in a colander, because there is a lot of liquid in the zucchini. Do not pour pumpkin juice down the drain. Drink the juice as it is or pour it into soup broth.

Frying vegetable steaks in a pan always brings a little excitement to life, according to Koivisto. Often the steaks fall apart or fall apart.

Koivisto gives three tips to help your zucchini steaks stay together.

1. Let the dough rest in the fridge for at least an hour. Then it thickens, and shaping the dough into patties is easier.

2. Shape the steaks into tight patties with your hands. Press the steaks properly between your palms and then place them directly on the hot pan. Reduce the heat on the plate as soon as you have the steaks in the pan.

3. Let the steaks cook in complete peace without breaking them at all. Only when the base is properly fried, turn the steaks. A thin spatula is necessary here.

Zucchini steaks

(for 4 people)

1 regular-sized zucchini (about 300 g)

1 pkt halloumi cheese (200 g)

1 egg

1 dl of breadcrumbs or breadcrumbs

oil for frying

1. Grate the zucchini into a coarse grater and let it drain in a colander. You can press the grater with a spoon or by hand so that the excess liquid drains out as well as possible.

2. Grate the halloumi cheese into a coarse grater.

3. Mix grated zucchini, grated halloumi, breadcrumbs and egg in a bowl. Put it in the fridge for about an hour, so the steaks stay together better.

Heat the oil in a pan. Shape the dough into tight patties with your hands and place directly on the hot pan. Turn the plate to medium heat and let the bottom of the steaks cook in peace without going to sear them. When the bottom is fried, turn the steaks and fry the other side as well.

Eat with tzatziki, for example.
