Many agonize over what to do with a bountiful harvest of zucchini, when all the delicacies have already been cooked, from stuffed zucchini to a sweet zucchini cake.

Zucchini makes a delicious and healthy sauce that serves as an easy base for soups, pasta sauces, lasagna and casseroles during the winter.

You can vary the spices according to your own taste. For example, rosemary or chili are also suitable for the sauce.

Zucchini sauce

2 medium zucchinis

approx. 500 g of tomatoes

2 dl of water

2 onions

4 cloves of garlic

1 teaspoon of salt

1 teaspoon of sugar

1 tablespoon of basil

1 tablespoon of oregano

1 tablespoon of thyme

1. Cut the zucchini into blocks and chop the onion and garlic.

2. Add water, zucchini blocks, onions and tomatoes to the pot.

3. Let it boil on low heat for about 20 minutes or until the zucchini and tomatoes have softened properly.

4. Add the spices and boil for a while longer.

5. Puree the sauce with a blender or stick blender until smooth and freeze in bags or boxes.
