Pumpkin soup

(For 4 people)

1 kg of musk pumpkin

6–7 dl of water for cooking

2 tablespoons of red curry paste

1 tsp (165 ml) light coconut milk

1. Peel and dice the musk pumpkin. Heat the water in a saucepan, add salt and pumpkins. Cook under the lid for 20-25 minutes until the pumpkins are completely soft.

2. Pour the water and move the pumpkins into a blender or use a hand blender. Add the coconut milk and drive the pumpkins into a smooth puree. If necessary, add water ½ dl at a time to provide a suitable consistency.

3. Raise the kettle back to the stove, add the curry paste. Bring to a boil and cook for another 8 minutes.
