There was a time when, due to circumstances that I don’t remember now, I became addicted to bread without salt. Either I had a very intense life that recommended that at least the bread be tasteless, or I had it quite tasteless and, thus, the bread was nothing but a continuation of my mediocrity. In any case, luckily, I went back to the traditional formula, although I confess that I would not be able to distinguish exactly the degree of saltiness of the bread. Therefore, it is likely that it will be unable to determine if the bread that we are going to consume from this week will be more bland than before. What worries me is the headline announcing this measure: “Bread will be more bland by Royal Decree.” I understand that regulation is necessary in response to public health criteria, but a part of my liberal soul revolts against state bakery interference. I am tempted to go to my main baker, Joan Pujades, from La Puntual (the “chato” – salty – of raisins and walnuts is Homeric!), and ask him for a specific order with the usual salt and not with the one that now happens to be regulatory. Maybe it would be a crime. In any case, it would be an order for personal consumption, and I would not harm anyone, and neither bread nor salt would be denied me.
