As delicious as cooked rice is, it can also be really dangerous. The danger lies in the storage of cooked rice and how quickly it is cooled.

Namely, rice can act as an intermediary food for the bacterium that causes food poisoning called Bacillus cereus. Bacillus cereus is a spore-forming bacterium, which means it produces very durable bacterial spores that are not destroyed at normal food heating temperatures.

According to the website Hygieniapassi.fi, food poisoning caused by B. cereus is typically caused by storing food for too long, the food has been cooled too slowly until it is sufficiently cold, or the food has stood for too long at too high a temperature, such as at room temperature.

Heated food containing rice should be cooled to a temperature of six degrees within four hours, if the food is not kept hot after preparation. Cooked rice should not be left to cool to room temperature.

Properly cooled and stored cooked rice should be eaten the next day. You can make fried rice from it, for example.

You don’t need any miraculous tricks to turn cooked rice into a delicious dish. As long as you have yesterday’s rice (which has been stored in the fridge) and an egg, we are already on the way.
