Ripeness has a significant effect on the taste of a tomato, because ripe tomatoes contain more sugars, while a raw tomato tastes sour.

Remember that tomatoes should not be stored in the refrigerator. A cool refrigerator does not improve their taste in any way, but instead the taste weakens and the texture of the tomato becomes watery.
