How is Molino Mayal born?
Molino Mayal arose from interest in healthy and quality bakery. Antón, my husband, imported a mill and from that moment an odyssey began. Enabling, Senasa, renting a place, rehearsals, designing a logo, etc. It took us a long time.
Employment is a lonely path with ideas, doubts, debts, tears, dreams … but if you continue every day putting your best.
Once we had the authorization I realized that it is not easy to sell a product that nobody knows. Having monthly expenses, such as rent, light, taxes … despair appeared, but thanks to my daughter who insisted with making an Instagram account of the mill, talking about what we do and offering it, bakers known in the environment began to arrive. They began publishing photos of bread made with our flours, to comment on us and so we got into.
What products do they offer?
We grind organic wheat in three different grinders, all integral.
Rye in two different grinders and spelled. In addition, I developed two condiments, one for bread and one for pastry.
And, three years ago we sow our spelled, a challenge where our Bio -Bio -Biodynamics Engineer is accompanied by our Biodynamics Engineer Nacho de Santis, in this project of cultivating ancient grains.
And are they going for more …?
Next year we will sow more varieties of ancient grains, which are super nutritious. The idea is to be able to increase production and hopefully we can develop more workshops and more connection.

What is the differential of Mayal mill?
Well, most mills are roller or hammer and grind a lot of grains. We chose an ancient grinding, return to the essential, prioritize quality above quantity, put life and not the industry in the food center. From each bag that comes out of this mill there is history, health and future.
There is a stone that spin as it turned centuries and a community that believes rightly, that another way of feeding is possible. Feeding in a healthy way is not a trend but necessity.

It is a sleepy dream …
I love working with my children, seeing how they are united to the mill, my husband who fixes the machines. It is our dream, so we put all the love every day.
