Iltalehti decided to ask Fazer and Vaasan bakeries what the recommendation is behind.

Fazer Bakery Communications Director Tarja Kuusela says that a few products come from bakeries in Sweden and Latvia. They are delivered to Fazer frozen.

– We melt the bread just before distributing, and then they move to stores, Kuusela tells Iltalehti.

He clarifies that freezing aims to reduce food waste and in some situations to facilitate production planning. For freezing, it is possible to deliver the right amount of products to the stores.

Vaasan Communications Manager Anni Pyykkö notes the same:

– Our bread will not be frozen before transporting to the store, except for some of the Vaasa Christmas mousse. This is because our capacity is by no means enough for such a tough sales of this seasonal product. We need to start baking Christmas loungers well in advance and freeze them to meet the demand for Christmas, says Pyykkö.

What happens if the bread is freezing contrary to the recommendation?

There is no microbiological risk in re -freezing bread products, and the product may mainly dry slightly if it is frozen again. Once frozen bread re -freezing reduces the quality of the bread, especially the taste, structure and freshness.

However, re -freezing bread does not pose a health, or microbiological risk, because bread is not an easy -to -free food.

However, according to the Frozen Regulation, the freezing must be marked “Do not freeze again after thawing”.
