The eight-round match will take place in Dallas on August 5. The weight class is set at 84 kilograms.
In February, Paul suffered the first defeat of his professional career when the half-brother of boxing legend Tyson Fury Tommy Fury defeated him by unanimous decision.
Diaz is one of the most popular fighters in UFC history, despite never winning a championship belt. He is known in sports circles as a gangster who is not afraid to speak his mouth to anyone.
