GVegetable skewers are nothing new, but don’t underestimate these very fresh courgette, mint and feta skewers, exquisitely Mediterranean. Instead of feta, you can choose Quartirolo Lombardo or primosale, softer and less flavourful. Present the skewers in a bouquet, with the marinade bowl next to them. White is better.

INGREDIENTS FOR 4:
4-5 dark courgettes
250 g feta
1/4 clove of garlic (optional)
1 sprig of fresh mint
extra virgin olive oil
1/2 lemon
salt

Procedure

Cut the feta into cubes. In a bowl mix the olive oil with the chopped fresh mint together with the garlic (optional), the filtered lemon juice and season with salt and pepper. Add the feta cubes and mix. Leave to flavor for 15 minutes.

In the meantime, trim the courgettes and slice them thinly lengthwise with a mandolin. Once the marinating time has passed, assemble the rolls: spread a slice of courgette on a cutting board and place a cube of feta on one end. Roll tightly to envelop the cheese completely.

Once you have made 4 rolls, skewer them with a metal skewer stick. Proceed in this way until you run out of ingredients. Heat a few tablespoons of oil in a sufficiently large non-stick pan and cook a few skewers at a time, browning them on both sides. Serve immediately with the mint sauce used to marinate the feta.

In less time
