According to Moilanen, crispy fried lemon gnocchi are insanely delicious – and easy to do.
To get the perfect gnocchi, remember to boil them before frying. Boiling makes the finished gnocchi juicy and frying covers the soft interior with a crispy crust.
The trick is that you don’t have to stir the gnocchi in the pan many times during frying, so that the crust gets crispy.
Gnocchi are suitable as a side dish, but you can of course pop them as is.
Crispy lemon gnocchi
(for 4 people)
500 g of gnocchi
3 cloves of garlic
1/2 dl olive oil
25 g of butter
Grated rind of 1 small lemon
1 pot of parsley leaves
To serve:
75 g grated parmesan
1. Cook the gnocchi in well-salted water for a few minutes. When the gnocchi rise to the surface of the boiling water, drain the gnocchi.
2. Chop the garlic cloves. Heat olive oil and butter in a frying pan. Add the garlic cloves and saute for a while.
3. Add the cooked gnocchi to the frying pan. Let the gnocchi cook for about 10-15 minutes, avoiding unnecessary stirring so that the gnocchi do not fall apart. Stir the gnocchi while cooking in the pan by just shaking the pan a few times.
4. When the gnocchi are fried until crispy and golden brown, add the grated lemon peel and chopped parsley. Transfer the gnocchi to a serving plate and add plenty of grated parmesan on top.
