The recipe for the Potted Shrimp Seemed me exciting, but perhaps also a bit heavy because of the clarified butter. I would have preferred to catch the shrimp with a landing net as before. This evokes dear memories of the Dutch and Belgian coast. The Dutch shrimps are unfortunately a good price nowadays, so I tried this recipe with ‘factory shrimp’ – that is, from the supermarket and not from the fishmonger, which are of course much tastier. I picked the bay leaf from my own garden and for some extra taste I added Old Bay Seasoning. Lime zest was also a good boost. Clarifying the butter is always a precise job that you should stay with. I used little nutmeg. It became a powerful snack through the butter, you have to love that. I appreciated the result, but use good shrimp next time. Delicious with toasted bread.
