The absolute favorites are Christmas fish, mushroom salad, ham, as well as Imellette potato box and lantu box.

In addition to Christmas dishes, Pimiä’s kitchen also creates Christmas cakes, but not all baking needs to be traditional Christmas.

A good example of this is the lemon-olive oil cake, which Pimiä bakes all year round.

The first time she baked this cake was four years ago. The husband was sold immediately.

– Teemu, I said the best cake so far. This cake is, in a word, so good! Pimia laughs.

According to him, this cake disappears quickly. Only crumbs remain.

The lemon-olive oil cake also made it into Pimiä’s new Christmas book Holiday at Christmas (Otava 2024).

Lemon and olive oil cake

(8-12 pieces)

Zest of 2 lemons

½ dl lemon juice

3 dl of cake or special wheat flour

½ tsp salt

2 dl sugar

1 teaspoon of baking powder

½ tsp baking soda

1 teaspoon of vanilla sugar

2 eggs

1½ dl olive oil

200 g of Turkish yogurt or sour cream

1. Preheat the oven to 175 degrees. Wash the lemons, grate their peel, not the white part, and save the grated peel. Squeeze the juice so that you get ½ dl of it.

2. After that, mix all the dry ingredients together in a separate bowl. In another bowl, mix the eggs (so that the texture breaks), olive oil, lemon juice, grated zest and yogurt or crème fraîche.

3. Combine the mixtures and mix until smooth, but do not beat the dough.

4. Pour the dough into the greased pan. Bake the cake on the middle level of the oven for 35-45 minutes. Test doneness with a toothpick. If you wish, you can decorate the cooled cake with icing sugar.

Note! You can use any kind of pan you like. If you make the cake in a flat pan, remember that the baking time is slightly shorter than in a traditional dry cake pan.
