In a decade and a year, Dabbang won the cult of cult of cult. Located in a small place on Scalabrini Ortiz, this simple and stripped space receives guests from all over the city, tourists – when there are – and many chef colleagues that recognize the quality and personality of their kitchen.
His proposal of powerful and unique flavors was born from the crossing between local ingredients and techniques and influences of the Southeast Asia, India and other corners of the world, collected on the trips of its creator, Mariano Ramón. Ramón, a low profile chef and strong convictions, always preferred to follow his own rules rather than adapt to fashions or demands of the traditional gastronomic circuit. In these eleven years, Dabbang’s proposal settled. The chairs improved and the service also, but the essence, luckily, remains intact.
Ramón knew how to be the head of the Masticar Market (how it is surprised!) And remains an active bridge with producers from all over the country. Its letter is brief, dynamic and is at the service of what the market offers.
There are iconic dishes that never left, such as the pakoras – Indian built -brushes – and the currys, which change with the station: this winter there is one of duck with chili pnkka and cane honey, and another lamb with oranges and Aguaribay (in addition to the lentil vegetarian). Jewels such as the violet alcauciles, the deer and the Pacú, baked with hazelnuts and Raita de Ananá also appear.

He does not take reservations and, in more prosperous times – these – he used to be a line at the door, which scared Michelin clients and inspectors. That never worried him. “Dabbang is a simple neighborhood place, so that the one who wants when he feels,” he says. “We always kept that essence. He played in favor never being a fashion restaurant.”
That authenticity is part of your identity. The atmosphere is austere, a little soulless, but that allows the focus to be where it has to be: in the taste.
