A delicious quick lunch is what many remote workers wish for.

Chef and food influencer Hanna Himanga with a tip you will succeed in your wish.

In this recipe, zucchini is used, but Himanka tells Iltalehte that, for example, sweet peppers, tatties, spinach, kale or collard greens are just as good.

Himanka says that she always has a 30-egg cell on her desk.

5 minute pan lunch

a small piece of zucchini, grated

a handful of fresh peas

2 eggs

salt

black pepper

olive oil

a stick of butter

pecorino or parmesan

1. Heat 2 tablespoons of olive oil and a knob of butter in a pan.

2. Squeeze the liquid out of the grated zucchini and throw the grated zucchini into the pan. Season with salt and black pepper.

3. Bring the peas along. Beat the eggs and pour the mixture into the pan.

4. Stir over medium-high heat until the texture is to your liking – don’t over-bake. Tip the beauty on a plate and grate a lot of pecorino and grind black pepper on top.
