Nicolas Tykocki He is young and did a lot. He started in Aramburu, he went to Europe, worked in Spain and Denmark, he returned to Argentina, to La Pebeta… and in each place he learned something that shaped the idea of ​​what he wanted his own restaurant to be. When the time came to open it he called it Acid, a declaration of love for that flavor that, as he learned in the beginning, generates, in his words, “some revolution in the mouth.”

The letter is shortwith eight dishes and desserts in which his tastes and those of his team are juxtaposed with the cuisines of the world, without any dogma other than the forceful presence of flavor. The formula worked: just eight months after opening they are one of those recommended in Buenos Aires by the prestigious Michelin Guide.

Each of the dishes on the menu forms, as Tykocki defines it, “a playlist of what I like,” and that includes the flavors that accompanied him in his life. The raw keppe that he ate in Sarquis as a child, the fried chicken that he ate in Florida, near Miami, where he lived during his adolescence, the grilled sardines and the heavenly tocinillo that he learned to make during his time in Spain .

There are also the contributions of his team, such as the squid putanesca style, spicy and delicious; the tteok caccio e peppe, a crazy cross of Korean rice “gnocchi” (teokbokki) with the cheese and pepper of the traditional Italian preparation; and ssam, more than a dish, a Korean ritual in which different ingredients are wrapped in lettuce leaves. This imprint is present in all Ácido dishes, which come accompanied by other smaller dishes with ingredients to combine with the main product.

To drink there is a good selection of young wines at various prices, beers and vermouths. Waiters are not known for friendliness or flexibility, so order without question and be prepared to pay, because it is not cheap. The space is pleasant and relaxed, with tables outside, perfect for the summer. They do not accept reservations and they are a success so go early or be patient.
