Bitter pill for SPARK
For Jonas and Maarten van VONK in Antwerp, the verdict is a bitter pill, but they keep their heads high. “We have won somewhere, for ourselves. VONK does not stop,” it sounds. The duo faced an acute staff shortage from day one, but thanks to their passion for meat and fire, they grew into a restaurant that charmed the jury. Their steak tartare and Britt’s legendary potato bar impressed, as did their perfect cuissons. “They are very young and have a bright future,” says Marcelo Ballardin.
