OVERVIEW: Another Michelin star for Willem Hiele (Oudenburg) and Table d’Amis (Kortrijk), Boury retains 3 stars

Two West Flemish restaurants are therefore new in the list with one star. Mathieu Beudaert of Table d’Amis was not present at the ceremony. Willem Hiele fitted for the chef’s jacket: “I really can’t fit in here,” he joked.

Striking: both Hiele and Table d’Amis return in no time past the great culinary gateway. Table d’Amis closed in 2018, the owners wanted to take it easy and handed in their Michelin star. Willem Hiele also had a Michelin star before, with his business in Koksijde at the time.

“Surprise”

“This was indeed a surprise,” responds Matthieu Beudaert from Paris. “We assumed that we still have work to do. This is a boost for the team that receives confidence from the Michelin guide: that gives a lot of energy.”

Tim Boury remains culinary top: together with Hof van Cleve and Het Zilte by Viki Geunes, he retains three stars with Boury in Roeselare.
