“Last period of cooking without pressure”: Le Fox in De Panne loses one Michelin star

Le Fox has two stars, but will soon have to hand in one after 18 years. Michelin will only announce all details this afternoon, but the losers were already told this weekend that they will lose a star. Le Fox therefore retains one star.

Chef Stéphane Buyens announces the news herself. He will close his restaurant in a year and a half and will not have a follow-up. “Today we’ve been wearing our stars for 38 years,” says Buyens. “Let’s bring a great story to a sprightly end as a team with tasty dishes from the wide range of le Fox with a brilliant star from Michelin and a nice 16.5 from Gault Millau.”

“Cooking without pressure”

Buyens, who at the time tried to save restaurants in distress on VTM as a chef-in-distress, wants to end his career as a top chef in Le Fox with a peace of mind: “we will cook that last period fully, without explicit pressure.”

You can follow the presentation of the Michelin stars live this afternoon on this website.
