A macaroni box is baked for dad that is even more delicious than delicious and somewhat more festive.

Chef Risto Mikkola planned a home-cooked meal for Father’s Day, the kind he likes to eat himself.

– The shrimp macaroni box started from my own preferences. I really like the meat-macaroni box and I’m thinking about how it could be done in another way, Mikkola explains.

A box of macaroni is probably one of the favorite dishes in many families, so it is eaten a lot even on weekdays. The macaroni box is therefore the right choice, because it tastes good to the whole family. However, according to Mikkola, the classic dish needed some changes.

Mikkola thought about a new angle and ended up replacing the minced meat with shrimp.

– Does it always have to be meat? The products of the sea are often needlessly forgotten, says Mikkola.

To be sure, Mikkola asked the foodies in her circle for their opinion on shrimp – and got approval for her idea.

Prawns bring their own festive flavor to the food. The box is seasoned in a new way, namely with a touch of chili and garlic. This is how traditional home cooking is raised to a higher level.

This Father’s Day box has the same structure as always, but slightly different spices.

Mikkola also spun the shrimp into skagen pulp, which is served with a box of macaroni, with salad or bread.

If you have leftover skagen, it’s delicious, for example, as a filling for baked potatoes or on top of blini.

– This is a facelift of traditional food. If you want, you can certainly increase the amount of chili.

Mikkola advises that the crabs should be thawed the night before. The important thing is that the shrimps are dry when you add them to the skagen mass. Drain the crayfish carefully in a colander and, if necessary, dry with paper towels.

Shrimp Macaroni Box

400 g peeled shrimps (frozen will do, thaw and drain well)

400 g macaroni

1 tablespoon of butter

1 onion, chopped

2 cloves of garlic, chopped

2 dl whipped cream

5 dl of milk

0.5 dl of sriracha chili sauce

150 g of grated cheese

3 eggs

1 teaspoon of salt

0.5 tsp black pepper

1 dl chopped dill

1. Cook the macaroni in plenty of salted water until almost cooked. Drain.

2. Heat the pan, add butter and saute the onion and garlic. Add the drained shrimp quickly to evaporate excess liquid (do not fry for long).

3. Mix eggs, cream, milk, sriracha, half of the grated cheese and spices in a bowl.

4. Combine macaroni, chopped dill and shrimp mixture, pour into a greased baking dish. Pour the egg milk-cheese mixture on top and sprinkle the rest of the cheeses on top.

5. Bake in a 200-degree oven for about 30 minutes, until the surface is nicely browned and the box has congealed.

Skagen salad

250 g peeled shrimps (preferably smaller ones, drained well)

0.5 dl mayonnaise

1 dl sour cream

half a small red onion, chopped

2 tablespoons of fresh dill, chopped

1 tablespoon of lemon juice

add salt to taste

black pepper to taste

For decoration:

lemon wedges

sprigs of dill

1. Mix mayonnaise, sour cream, lemon juice, onion and dill in a bowl.

2. Add the prawns and mix gently to keep the texture fluffy.

3. Season with salt and pepper. Allow to season in the refrigerator for 15–30 minutes. Serve with a green salad.
