A cake built in glass is easy to make, reminds the chef Risto Mikkola. If you don’t want to find space in the fridge for a bigger cake, a cake made in glass also solves the storage problem.
Assembling a glass cake is easy, but if you don’t want to use glasses, you can also make the cake in a serving bowl or baking dish.
This portion made in glass is fresh and delicious, orange and Domino cookies take care of it. You can make an easy cake base from the cookies. Mikkola uses Domino cookies with a strong cocoa flavor.
The cream-egg mass is cooked in steam. In addition to orange, citrus freshness comes from lime and lemon.
The jammed orange peel gives the cheesecake its own additional flavor. It makes a good addition to many baked goods and desserts. You can jam the peel in sugar broth by boiling it.
This cake is best for Father’s Day morning or brunch.

Orange cheesecake
Filling 1:
1 vanilla pod, split, seeds removed
4 egg yolks
2 dl whipped cream
200 g of sugar
Zest of 1 lime
Zest of 1 lemon
Peel of 1 orange
Filling 2:
3 dl of water
200 g of sugar
5 oranges
50 ml orange liqueur/cognac
Bottom:
1 pkt Domino cookies
Ornamentation:
1 disc of dark chocolate, grated
1. Put all the ingredients for the cream cheese filling in a bowl and cook in a water bath for 20 minutes or until the mixture has thickened.
2. Strain and put in the fridge to cool.
3. Prepare the orange filling. Peel and fillet the oranges. Put the sugar, water and liqueur in a saucepan and boil for five minutes. Add the orange slices.
4. Cook for a few more minutes and cool.
5. Assemble the cake in serving dishes or glasses. Crumble a few biscuits on the bottom of the serving dish and pour the orange fillets and broth on top.
6. Spoon the cheese filling on top of the base. Decorate the portion with grated chocolate and candied orange peels (instructions below).
Candied oranges
Peels of 3 oranges
4 dl sugar
2 dl of water
1. Put water and sugar in a pot and boil for 15 minutes.
2. Peel the orange with a paring knife and cut into strips. Drizzle the orange peel strips three times in boiling water and add to the syrup.
3. Boil orange peel strips in syrup for 15 minutes. Cool and serve with the cake.
