Brandade is a French stew. Brandade is familiar to few Finns, although it may have been encountered on a holiday in Spain or France. It is eaten in both countries, even though the food originally came from France. It is a traditional French stew orthodox made from salt cod. But now chef Risto Mikkola chose fish other than dried cod.
