Zeina’s carrot box, 6 servings.
1 kilogram of carrots
2 deciliters of brown rice
3 deciliters of cream
2 eggs
0.5 deciliters of dark syrup
2 pinches of nutmeg
About 2 tablespoons of white pepper
Salt
Boiling water
30 grams of butter
0.5 deciliters of breadcrumbs
Peel the carrots and chop them into large pieces. Put the carrots in a pot, pour water on them and cook them under the lid until soft. Put your porridge in a pot, pour water over it. Bring to a boil over high heat, reduce heat and let simmer on medium heat, covered, for about 20 minutes until the rice grains soften and absorb all the liquid. Stir evenly to the bottom of the pan. Heat the oven to 200 degrees, with top and bottom heat. Puree the carrots until smooth. Then add rice porridge, cream, eggs, syrup, nutmeg, white pepper and salt. Mix everything thoroughly. Pour into a medium baking dish. Make holes in the carrot mixture with a fork. Sprinkle the breadcrumbs evenly on top and add the butter cut into small cubes. Cook on the middle level of the oven for about 30-35 minutes.
