Fermented with yeast: Sevenum baker not a master baker | 1Limburg

The baker Bas Gommans from Sevenum did not manage to win the title of Meester Boulanger. After months of practice, Gommans made a mistake with his yeast on Wednesday.

The much-needed dough proofing tool that Gommans had brought along was no longer good, according to a Facebook message from the disappointed baker. “Too far past the best-before date and I also forgot to put the yeast in the cold store after exam day 1”, he confesses honestly.

The two and a half day long final in which he had to bake sixteen loaves of bread started on Monday. The first day was flawless, but Tuesday it went downhill. Due to the yeast problem, the croissants did not come out of the oven properly, and the stress caused Gommans to make more mistakes. In the end, he scored two unsatisfactory marks out of a total of 16 assignments. Nevertheless, according to the baker, the jury was full of praise for the craftsmanship, the techniques used and the taste palette. “Everything was right up to the end product.”

Titans job
The test to become Master Boulanger is a test that a baker does not just dare to take. There are currently only seven bakers in the Netherlands who can adorn themselves with the title. Before a baker can even try it, he or she must already have ten years of experience.

Preparation
Gommans did not start the titanic job unprepared. In February he threw himself into the preparations. Since then, he has performed the entire exam eleven times as an exercise, both in his own bakery in Horst and in places where he is not well known.
