In January, you can taste healthy and light dishes, which, however, do not lack flavor. Turn a delicious rainbow trout noodle wok.
According to the new nutritional recommendations, about 300–450 grams of fish should be eaten per week, and at least 200 grams of this should be fatty fish.
Fish is full of omega-3 fatty acids and high-quality protein, so it’s a great choice for January’s menu when you’re in the mood for healthy and easy-to-prepare food, reminds Pro Kala in its announcement.
Domestic rainbow salmon, rice noodles and vegetables make a delicious wok in no time, which is suitable even for a busy day. The taste of the food is given by the sauce, which contains, among other things, soy and ginger.
In WWF’s Fish Guide, rainbow trout raised in the Nordic countries have received a green mark, which means it should be preferred. Norwegian salmon, on the other hand, has received a yellow mark in the guide, which means that you should buy the fish carefully.
Rainbow salmon and noodle wok
(for four)
500 g rainbow salmon fillet
1 teaspoon of salt
1 dl sesame seeds
2 tablespoons rapeseed oil for frying
coriander and Thai basil
200 g of rice noodles
2 carrots
1 red chili
1 small broccoli
Sauce:
1.5 dl soy sauce
A 4 cm piece of ginger
1 dl honey
2 tablespoons of sesame oil
1/2 dl lime juice and grated zest
Put the noodles in cold water to soak for 10-15 minutes.
Remove the skin from the rainbow salmon fillet, cut into portions and season with salt. Put the sesame seeds on a plate and “dip” the salmon pieces on both sides in the sesame seeds.
Fry the fish until cooked in rapeseed oil and place in a 100-degree oven to wait.
Cut the carrots and chili into strips. Cut the broccoli into as thin slices as possible.
Mix the sauce ingredients together and set aside to wait for finishing.
Drain the noodles in a colander. Heat a drop of oil in a wok or a large enough frying pan until hot.
First stir-fry the vegetables in oil, turning constantly, add the noodles and continue frying for a while, stirring constantly. Finally, add the sauce and fresh herbs. Assemble and serve together with fried fish.
