Many stores of baking points, such as croissants, rolls and rice pies, are delivered to stores pre -baked or frozen.
They are baked on the spot to make them fresh to customers.
Baking points are part of the grocery store strategy to provide fresh bakery products in an readily available form, often as self -service and loose pieces.
But how long can they be kept properly?
– We have instructed so that they can be stored at room temperature this day. That is, during the same day, when the products are made, they can be safely enjoyed, says Fazer Bakery Product Development Director Juhani Sibakov.
– We think this guidelines are sufficient because every consumer retains the products as they see it best. Of course, you should also avoid storing products at too high temperatures.
The Ministry of Agriculture and Forestry Regulation on food hygiene regulates the retention period of food.
– According to the regulation, products should not be eaten the next day, he explains.
– The Food Agency has made a risk assessment related to the shelf life of the products. Unfortunately, as a Fazer’s representative, I cannot take a stand because this is a regulation based on the legislator’s risk assessment.
One advantage of baking point products is low food loss, as products are often purchased only in terms of pieces. In addition, many stores offer evening discounts on products that would otherwise be unsold. Laura Vesa
Is there a big risk here and what can you follow if they are eaten?
– The longer the products are stored: the microbes can then go there to grow, so there is always a potential risk to stomach problems. That is, when they are eaten the same day, there is no risk.
Thus, a greater risk exists if the product was stored for the next day.
– That’s what it is in practice. Fazer’s instructions are precisely that the baking point product is eaten during the same day of purchase and the storage is at room temperature so that you do not necessarily have to put in the refrigerator as the setting is given, she refines.
– This is a background work done by the Ministry of Agriculture and Forestry and, as a result, legislation with guidelines.
“According to Fazer’s own studies, however, rice pies stored at room temperature, or meatless pies, are safe to eat the next day,” Sibakov says.
– Sure, if the products are kept in the refrigerator, then there is a lower risk. As the lower the temperature, the longer the food will remain, no matter what a sensitive food.
Whether freezing is a good idea to extend the shelf life of the products. For example, could the baking point products be frozen?
– Sure, it depends on which product is. If the product comes to the baking point as a raw freezer, it can still be frozen after baking. However, this should be done as soon as possible. If, on the other hand, the product is already fried and then stored as frozen, it should not be frozen after thawing, Sibakov instructs.
– However, for example, a large part of the products containing rice or meat are stored as raw frozen before baking, so it is possible to freeze them.
