This chocolate mousse will save you from dessert panic. Mikael Mihailov

According to Mihailov, the “à la minute” mousse is vegan, easy and perfect for true chocolate lovers.

– The speed and practicality of the method make it unique. I used it in a restaurant for the first time already in the early 2000s. Especially in busy situations, such as service, this mousse has saved many a dessert crisis, Mihailov says and continues:

– With this recipe, an incredibly intense chocolate flavor is created in the mousse, which has charmed customers, guests and my friends around the world.

So what is it about?

The finished mousse can be decorated with cookie crumbs and finger salt. Mikael Mihailov

Mihailov states that what makes the recipe unique is its adaptability and ease. You can change the liquid to match the theme.

– For example, juice made from currants collected yourself in the summer works wonderfully. At Christmas, mulled wine brings wonderful warmth and spiciness to it.

The recipe is based on the emulsion formed by chocolate fats and liquid, which is created by whipping and an ice bath. The end result is a silky mousse without cream or eggs. If the mousse fails or becomes grainy, you can simply melt it again and start the process over.

The world’s easiest chocolate mousse

250 g of dark chocolate (e.g. Valrhona Manjari 64%)

200 g of fresh orange juice (you can replace with e.g. mulled wine or mulled wine)

freeze

finger salt

toasted cookie crumbs

1. Weigh the chocolate and liquid.

2. Boil the liquid and pour it hot over the chocolate. Mix until smooth.

3. Place the bowl in an ice bath and beat with a whisk for about 3-4 minutes until the mixture thickens a little.

4. When the consistency resembles whipped cream, remove from the ice bath and let the mousse set for a while. It solidifies itself into a perfect structure.

If the structure is not successful, melt the mixture carefully and start the process from the beginning.

5. Spoon the mousse into a glass, bowl or plate. Finish with a pinch of finger salt and toasted cracker crumbs.

Tips!

1. The aromas of the chocolate and the liquid are emphasized especially well when you use high-quality dark chocolate and a suitable flavoring liquid, such as orange juice or mulled wine.

2. This recipe is perfect at home, at the party table and in professional kitchens, and saves dessert conundrums in any situation.
