Chef of the year Simo Harrivaara understand very well that you don’t always have time or be able to make all the dishes yourself.
If you want to give the store’s ready-made box additional flavor, you should definitely implement it with Harrivaara’s tips.
Browned butter is a real secret weapon that makes food taste better than any other food, even a box of bacon.
Instead, the carrot box gets extra flavor from the coconut.
A lantu box seasoned with browned butter and thyme
1 pkt (350 g) ready-made lantu box
1 tablespoon dried or fresh thyme
100 g of browned butter
1 dl whipped cream
2 tbsp maple syrup
1/2 tsp ground white pepper
1 teaspoon of salt
2 tablespoons of panko flour
1. Turn on the oven to 175 degrees. Mix all the ingredients except the panko flour in a bowl until smooth and check the taste. Add salt if needed.
2. Put the mixture in a greased ovenproof dish, shape the surface with a spoon and finally sprinkle panko flour on top.
3. Bake in a 175-degree oven without a lid for about 45 minutes, until the surface is golden brown.
TIP! Browned butter is easy to make. Melt 100 g of butter over low heat in a saucepan. Turn the heat to full and let the butter heat up to 157 degrees, stirring occasionally. A thermometer is a good tool for this. Immediately pour the browned butter into another bowl and let cool at room temperature.
Vegan Carrot Coconut Box
1 pkt (350 g) vegan carrot box
1 teaspoon ground coriander
1 dl coconut cream
1/2 dl coconut oil
2 tbsp maple syrup
1 teaspoon of salt
1/2 teaspoon ground allspice
1/2 tsp turmeric
2 tablespoons of coconut flakes
1. Turn on the oven to 175 degrees. Mix all the ingredients except the coconut flakes in a bowl until smooth and check the taste. Add salt if necessary.
2. Put the mixture in a greased ovenproof dish, shape the surface with a spoon and finally sprinkle the coconut flakes on top.
3. Bake in a 175-degree oven without a lid for about 45 minutes, until the surface is golden brown.
TIP! You can make flatbreads from the remaining carrot box by mixing 100 g of carrot box, 100 g flour, 2 dl milk and 1 egg in a bowl to form a smooth mass and frying in a flat pan until crispy.
