Cautumnal colours, pre-Christmas flavor of sugar and cinnamon for this very aromatic sweet pizza. Here it is served on a designer oven shovel, but a nice olive wood cutting board will give the same effect of sincere, rustic delicacy.

INGREDIENTS FOR 4:
For the dough: 330 g “0” flour (400 W)
180 g wholemeal flour from ancient Sicilian durum wheat
90 g flour type “2” (200 W)
60 g approx. water for the dough
14 g salt (better wholemeal)
22 g extra virgin olive oil
5 g fresh brewer’s yeast
3 l peanut oil for frying.
For the topping:
360 g raw cane sugar
240 g ground cinnamon
120 g rosemary.
For the filling (doses for 1 pizza):
90 g raw cane sugar
60 g ground cinnamon
30 g chopped rosemary.

Procedure

Finely chop the rosemary, add it to the cinnamon and sugar and mix them carefully. Roll out the dough created with the three flours, the yeast, the extra virgin olive oil and the salt and make a disc of 22 cm in diameter, pierce it with your nails and eliminate the excess flour before immersing it in the pan with the frying oil at 190°.

With a slotted spoon, continue to wet the pizza on the upper side, so as to ensure even cooking, and fry for about 45 seconds. Turn the disc of dough using two slotted spoons and fry for another 45 seconds.

Drain the pizza and bread it with the mix of sugar, cinnamon and rosemary while it is still lightly oiled. Transfer it to a cutting board and cut it into 4-6-8 segments with a carving knife before serving.

Here the procedure is ultra reduced but in reality this is magnificent manual is full of details on the techniques (even twenty) of preparation and cooking.
