Chow mein (chǎomiàn) literally means: fried noodles and has countless variants. We make this chow mein with tofu, Chinese cabbage and oyster mushrooms.

Ingredient list:
– 250 grams of Chinese noodles
– 60 grams of fresh ginger
– 3 cloves of garlic
– 1 medium onion
– 5 spring onions
– 150 grams of oyster mushrooms
– 500 grams of Chinese coal
– 375 grams of tofu
– 1 tablespoon cornstarch
– 4 tablespoons Japanese soy sauce
– 2 tablespoons sesame oil
– 2 tablespoons peanut oil
– 2 tablespoons ketjap manis

Preparation method:
– Prepare the noodles according to the instructions on the packaging. Drain and rinse under cold running water. Drain well and keep aside in a colander.
– In the meantime, grate the ginger and finely chop the garlic. Cut the onion into half rings of 1 cm. Cut ½ cm from the top and bottom of the spring onions and cut the onion into 3 cm pieces (including the green). Tear the oyster mushrooms into pieces and cut the Chinese cabbage into 1 cm strips.
– Cut the tofu into 1½ cm cubes and place in a bowl. Stir in the cornstarch, ¼ of the soy sauce and half of the sesame oil and mix until the tofu is coated throughout. Sprinkle with pepper.
– Heat the peanut oil in a wok over high heat. Add the tofu and stir-fry for 2 minutes. Add the oyster mushroom and fry for 2 minutes. Add the garlic, ginger and onion and fry for 1 minute. Add the Chinese cabbage and spring onion, stir and fry for 2-3 minutes. Add the noodles, the rest of the sesame oil, the rest of the soy sauce and the soy sauce and stir-fry briefly until everything is warm.
