Which side of the shortbread should be buttered, the side with holes or the smooth side?

One is clearly right and the other wrong, at least if numerous online discussions on the subject are to be believed. There has been a lot of debate over a seemingly small matter.

In the horizontal cup, both application and mouthfeel, healthfulness and taste seem to weigh. On the smooth side, the spread can be swiped more evenly, on the perforated side, fat spills will sink into the cavities.

The choice is also connected to an old wisdom: in the village, butter is put on the hole side and at home on the smooth side.

You should ask the manufacturer for the correct method.

However, from the manufacturer’s point of view, the right side is basically clear: it is the hole side.

In the factory, the bread rolls go on the line with the hole side up, i.e. the smooth side is the bottom of the bread.

– I once asked the production manager about it and he said that the bread comes from the factory with the holes facing up, so in his opinion the right side is the side with the holes, says Taxell.

Taxell, on the other hand, has received the justification from the children that the spread is put on the hole side, because more butter sinks into it.

– Whether you want to win a lot or not is actually the answer to the question, he sums up.

For this reason, Taxell lubricates its own shortbread specifically from the smooth side.

Taxell says that the method of making crisp bread requires that the bread has two different sides.

Thanks to the patterning, air can pass through the crust during baking and the structure of the bread becomes suitably airy. Without the holes, the bread would swell in the oven like a balloon.
