Julián Ayestarán, How were the beginnings of the winery?

The story started almost by chance: looking for a weekend house, we ended up buying the oldest vineyard in the province. The hole conquered us from the first moment, surrounded by forests, rivers and mountains. We close the purchase by signing the writings in the hood of the truck.

The property was deteriorated by a fire and without infrastructure, but we took it as a challenge. With work, effort and enthusiasm, we transform it until it becomes what the winery is today. Of course: I still don’t have the house.

What are the services they provide to the public?

We make guided tasting visits. We are a boutique winery with six hectares where we produce red, white and foaming. We work Merlot, Pinot Noir, Sauvignon Blanc, Chardonnay and Gewürztraminer, the latter an unusual strain that we want to encourage: we even give outbreaks to local producers to increase their presence in the area.

We also offer fractionation service for small vineyards without a warehouse, something unique in Chubut. And we receive visitors with tastings and tours of our vineyards, combining wine, landscape and history.

How are they projected for the future?

We want to continue growing, innovating and betting on the region. Thus our Icewine arose, the first in the country without artificial freezing, thanks to unexpected frost. We are also wineing at amphorae made with clay of Puerto Madryn, and doing pilot tests further south, in Santa Cruz, to continue expanding the Patagonian wine border.

What are your differentials in the field?

We are the most awarded winery in the province, with the oldest vines even in production. Our location is also particular: we are in the mountain range, in the currumahuida slope, which brings a special character to our wines.

In addition, we encourage a strong spirit of community with other producers, and offer our space for local artists to exhibit their works, mixing wine and art in an integral experience.

If they started again, what would make different?

Nothing. Not because we have done everything right, but because we learned a lot from each error. Those stumbling made us grow, improve and get where we are. In the distance, we understand that there is no better teacher than our own error.
